ITALIAN SALAD DRESSING

This salad dressing recipe is my own, and I have been experimenting with it for years. This is the 2007 version. It is good on a mixed green salad, a salad of tomatoes, basil and sliced onions, mixed with a bit of mayonaisse for dressing a potato salad, seafood salads, or any other place where a bright, fresh flavor is sought. This is infinitely better than that stuff in bottles on the grocery shelves.

In a bottle with a cap add:

  • 2 cloves garlic, finely minced
  • juice of a lime or half a lemon and enough white wine vinegar
    to make 1/3 cup
  • 1/2 cup olive oil
  • tsp dry mustard
  • 1/2 tsp sugar
  • good grind of white pepper
  • tsp Worstershire Sauce
  • 1/2 tsp Tabasco Sauce
  • Tbl fresh herbs, choose one or two from dill, basil, cilantro,
    thyme, parsely, chives, tarragon etc.
  • pinch of salt

Cap the bottle, give it a good shake and let the Salad Dressing rest for a bit to mingle the flavors. Shake well again before using.
